The multiresidue analysis of pesticides in food is an essential tool for ensuring food safety amid the expansion of global supply chains and increasingly stringent international regulatory requirements. This work consists of a literature review aimed at synthesizing methodological advances related to sample preparation and instrumental detection of pesticide residues in complex food matrices. The research was conducted through a bibliographic survey of international scientific databases, followed by a descriptive, thematic, and chronological analysis of the selected studies. The results show that the QuEChERS method and its variations remain the gold standard for sample preparation, being widely combined with liquid and gas chromatography coupled to tandem mass spectrometry, achieving recovery rates predominantly between 70% and 120% and quantification limits in the order of micrograms per kilogram. A growing adoption of high-resolution mass spectrometry for non-targeted screening was also observed, along with advances in portable devices and techniques aligned with green analytical chemistry principles. It is concluded that, despite the robustness of well-established laboratory methods, challenges remain regarding inter-laboratory standardization, matrix effect mitigation, and the validation of rapid technologies for real-time monitoring, pointing to relevant directions for future research.
